 The state tree of our Tamil Nadu "Palm Tree" is the only thing we know .... There is a strong connection between the palm tree and our Tamil life.

Palm jaggery is made by collecting palm water(Neera; பதநீர்) from the palm tree and by the process of heating and cooling.

Approximately 24 kg of palm jaggery can be prepared from the palm water obtained from a single palm tree.

Palm jaggery has a unique aroma and medicinal properties. The Palm jaggery is produced mostly from the palm trees found in the southern districts of Tamil Nadu during the months of Tai, Masi, Panguni, Chithirai, Vaikasi and Ani when the palm water (பதநீர்) availability is high. At other times the production of palm jaggery is less. Thus the palm jaggery's price will be higher in the trading market. Sales of counterfeit palm jaggery are also on the rise in market.
