HOW TO PREPARE URAD DAL PORRIDGE:

INGREDIENTS :
  • Urad dal - 1 and 1/2 cup
  • Jaggery - 3/4 cup
  • Coconut milk or cow milk -1/2 cup (Optional) 
  • Grated coconut - 1/2 cup
  • Cardamom - 2 nos
  • Salt - a pinch
  • Water - as required 
  • Cashew nut (Optional)
  • Raisins (Optional)
  • Ghee (optional) 


METHOD:
  • Rinse the urad dal and soak it for two hours(atleast 1 hour).
  • Then grind the soaked urad dal as a smooth paste by adding a cup of water. It should be pouring buttermilk consistency.
  • Keep all the ingredients ready.
  • If you have impurity jaggery, you can make jaggery syrup and strain it.
  • Take a saucepan, add urad dal paste and a pinch of salt. Mix well and cook it in a low flame, until urad dal gets cooked well. Adjust with water, if it's getting too thick.
  • Stir it continuously otherwise it gets stick to the bottom. 
  • Now you add some coconut milk and crushed or powdered cardamom. Stir well continuously.
  • Once the urad dal is cooked well, add jaggery syrup. Stir well and cook until porridge consistency. Now nice aroma comes. 
  • You add grated coconut if you desired.
  • Once done add ghee, cashew nuts, raisins if desired and switch off the flame.
  • Now you can serve the hot and healthy urad dal porridge.

    The origin of Indian borage or mexican mint is parts of southern and eastern Africa. Indian borage is one of the perennial plant in Africa. Although it also grows in tropical areas around the world. Indian borage is very hardy plant and this has thick fleshy leaves. It grows quickly and it requires very little water. Propagation is by stalk cutting otherwise it can be grown from seeds. Indian borage can be grown both indoors and outdoors. Indian borage is known as Ajwain in Hindi and Karpuravalli in Tamil. It has much more health benefits.

Indian borage has vitamin A, vitamin C, Omega-6 fatty acids and some minerals. 



HOW TO PREPARE INDIAN BORAGE TEA AT HOME:

INGREDIENTS:
  • Indian borage leaves (Karpura valli leaves)
  • Holy basil leaves (Thulasi leaves)
  • Thorny creeper leaves (Thoothuvalai)
  • Dry Ginger
  • Pepper

METHOD:

  • Sun-dry all the ingredients till they became dry completely.
  • Grind it all together to a fine powder. You can use your home mixer grinder.
  • Store the herbal tea powder in a clean and dry airtight container in a cool and dry place. Because moisture can spoil the powder.
  • Make this herb powder or you can add directly those leaves to prepare tea decoction.
TEA PREPARATION:
  • Take a vessel, add one tea-cup of water, add 1/2 tea-spoon of Indian borage herbal tea powder and add required amount of powdered jaggery or palm jaggery or palm candy as per your wishes....
  • Boil till the water decreases to half of the level. Then remove from the heat and filter out by using a clean strainer.
  • Now you can serve or intake  the hot healthy herbal tea.
  • If you would like to add honey, once it cools and strain it, mix it with little honey. Now you can intake.

  • Small onion - 5 nos
  • Tomato - 1
  • Garlic - 5 cloves
  • Cumin seeds - 1 tea spoon
  • Pepper - 1 tea spoon
  • Salt - to taste
METHOD:
  • Clean and wash the moringa stems.
  • Take a cooker add the above ingredients and add enough water, then close the lid, cook this low medium flame.
  • Cook it in 3 to 5 whistle and wait for releasing pressure.
  • Then filter that juice by using a clean strainer.

     Thoothuvalai is a common place medicinal  plant in Tamilians household as a remedy for cold and cough. Thoothuvalai has dark green colour like a triangular-shaped leaves with small thorn, purplish blue colour flowers, small red colour berries.


THOOTHUVALAI MEDICINAL USES:

  • Various parts of the thoothuvalai plant such as roots, leaves, flowers and berries(fruits) are used for treating respiratory ailments.
  • The decoction of the leaves, berries and flowers is folk remedy for chronic cold and cough.
  • That leaves are given to increase fertility in males by treating watery semen and spermatorrhoea.
HOW TO PREPARE THOOTHUVALAI RASAM:

INGREDIENTS:
  • Thorny creeper leaves    - 30 leaves
  • Pepper - 1 Tea spoon
  • Cumin seeds - 1 Tea spoon
  • Garlic - 5 cloves
  • Red chilly - 3 nos
  • Coriander leaves - 1 handful 
  • Curry leaves - 1 strand
  • Tamarind - 1 gooseberry size
  • Tomato - 1 ( if needed)
  • Salt - as needed
  • Turmeric powder - 1/4 tea spoon
  • Mustard seeds - 1/4 tea spoon
  • Asfoetida - 1/4 pteap spoon
  • Gingelly Oil 
METHOD: 
  • Clean and wash that leaves finely.
  • Take a kadaai, pour some oil, add pepper, cumin seeds, thoothuvalai leaves and garlic, then satue well in low medium flame and grind it together finely.
  • Then take a kadaai, pour oil, add mustard seeds, urad dal, curry leaves, red chilly and that grinded paste, saute them well.
  • Then add tamarind paste, turmeric powder, salt and asfoetida.
  • After boiling that rasam, add coriander leaves finally and turn off the stove. 
  • Now you can serve the hot and healthy, yummy thoothuvalai rasam with rice.

   கற்பக மூலிகைகளில் ஒன்று தூதுவளை. இந்த கொடி வகை தாவரம், ஈரம் நிறைந்த செழிப்பான இடங்களில், வேலிகள் அல்லது மற்ற செடிகளைப் பற்றி படர்ந்து, புதர் போல வளரும் தாவரமாகும். இத்தாவரத்தில், சிறு சிறு வளைந்த முட்கள், கரும்பச்சை நிற இலைகள், ஊதா நிறப் பூக்கள், உருண்டை வடிவத்தில் சிவப்பு நிற பழங்கள் காணப்படும்.


தூதுவளை ரசம்:

      சளி,  இருமல் நீங்க தூதுவளை ரசம் நல்ல மருந்தாகும்.

தேவையானப் பொருட்கள்:
  • தூதுவளை  - 30 இலைகள்
  • மிளகு    - 1 தேக்கரண்டி
  • சீரகம்    -  1 தேக்கரண்டி
  • பூண்டு - 5 பல்கள்
  • மிளகாய் வற்றல்   - 3
  • கொத்தமல்லி தழை - 1 கைப்பிடி
  • கறிவேப்பிலை  - ஒரு கொத்து 
  • புளி    - பெரிய நெல்லிக்காய் அளவு
  • தக்காளி  - 1(தேவைப்பட்டால்)
  • உப்பு - தேவையான அளவு
  • கடுகு - 1/2 தேக்கரண்டி
  • மஞ்சள் தூள்   - சிறிதளவு
  • பெருங்காயம்  - சிறிதளவு      
தூதுவளை ரசம் செய்முறை:
  • ஒரு கடாய்யில் எண்ணெய் ஊற்றி காய்ந்ததும் சீரகம், மிளகு, பூண்டு, தூதுவளை இலைகள் சேர்த்து வதக்கவும், பின் இதனை நன்கு அரைத்து வைத்துக் கொள்ளவும்.
  • ஒரு கடாய்யில் எண்ணெய் ஊற்றி காய்ந்ததும் கடுகு சேர்த்து பொரிந்தவுடன் மிளகாய் வற்றல், கறிவேப்பிலை மற்றும் அரைத்த தூதுவளை விழுதை சேர்த்து வதக்கவும்.
  • பின்பு புளி கரைசல், மஞ்சள் தூள், உப்பு, பெருங்காயம் சேர்க்கவும்.
  • ரசம் கொதித்தவுடன் கொத்தமல்லி தழை சேர்த்து அடுப்பை அணைத்துவிடவும்.
